Almost three years in the making…
In September 2020 we brought in 100+ gallons of Grade A Maple Syrup from Vermont.  We then placed it in two freshly emptied 8yo Elijah Craig Barrel Proof barrels.  It aged there for 6+ months and the resultant syrup was sold in May of 2021.
We also used that barrel aged maple syrup to make Blue Waffles.  The batch was released in August of 21’.
We couldn’t resist and took the time to sneak a bit of it into a barrel too.  In this particular case; a 7.5yo Laird’s Apple Brandy barrel.  After 22+ months in the wood; it’s ready for consumption.
